75% Sauvignon Blanc, 25% Chenin Blanc
We're thrilled to introduce our inaugural Central Coast white wine blend! Our Sauvignon Blanc hails from the esteemed Oliver's Vineyard in the San Luis Obispo Coast AVA. The Chenin Blanc is sourced from the dry-farmed, certified organic Bailey Ranch in the Adelaida District of Paso Robles. This exceptional blend undergoes native yeast fermentation and is aged perfectly in a French concrete egg for six months. It remains unfined and unfiltered, allowing its purest expression to shine through.
Pressed off skins and cold settled before going into the concrete egg. Once in the egg, it was allowed to start fermenting naturally. After completing fermentation it was racked again and put back to age in the egg for 6 months. Not fined or filtered.
